Running a restaurant kitchen is nonstop—orders flying in, grills blazing, fridges swinging open and shut all day. But if your equipment goes down during dinner rush, it doesn’t just ruin service—it hits your bottom line. Emergency repairs are expensive, and unexpected downtime can cost you customers.
That’s why preventative maintenance isn’t optional—it’s essential.
At HRI, we help restaurants across the country avoid costly breakdowns by keeping their equipment in peak condition. Here are 10 practical, chef-tested daily and weekly maintenance tips every commercial kitchen should follow to avoid disasters and extend the life of your most important tools.
Grease traps are often out of sight—but they shouldn’t be out of mind. When left unchecked, they’ll clog, stink, and back up wastewater into your kitchen. And yes, that means health violations and downtime.
🧼 Do this: Scrape plates, wipe pans before washing, and clean out the trap every single day. Don’t wait for it to overflow.
⏰ When: Daily (and more often if you’re running high-volume fryers).
Your walk-ins work overtime—don’t let a $20 gasket ruin a $5,000 compressor. Cracked or dirty door seals let cold air escape, making your equipment work harder and leading to costly repairs (or spoiled food).
🧼 Do this: Use warm, soapy water and a soft cloth to wipe down gaskets daily. Check for gaps or brittleness weekly and replace as needed.
⏰ When: Wipe daily. Inspect weekly.
Here’s a nightmare: you serve “clean” drinks, but your ice is harboring mold and bacteria. Ice machines need regular cleaning, or they’ll become a health hazard.
🧼 Do this: Wipe the bin daily. Once a week, turn off the machine, drain it, clean the interior with a food-safe sanitizer, and rinse thoroughly.
⏰ When: Bin daily, full clean weekly.
Your exhaust hood does more than just suck up smoke—it prevents fires. But if your filters are caked with grease, airflow suffers and fire risk skyrockets.
🧼 Do this: Remove filters and run them through the dishwasher or soak them in degreaser weekly. Wipe the interior hood surfaces daily to keep things safe and code-compliant.
⏰ When: Filters weekly, hood exterior daily.
From mandolines to meat slicers to food processors, dull blades don’t just slow you down—they strain motors and can cause uneven cuts or even accidents.
🧼 Do this: Wipe down all blades after use, and sharpen or replace as needed. Make it a weekly habit to inspect blade edges and tighten loose hardware.
⏰ When: Spot-check daily, sharpen/inspect weekly.
If your burner flame is orange or uneven, you’ve got a problem—maybe a dirty or clogged orifice, maybe poor gas pressure. Either way, your cooking temps won’t be accurate.
🧼 Do this: Make sure pilot lights are on before opening for service. Clean burner ports gently with a brush or needle if flames are weak or miscolored.
⏰ When: Daily visual check, weekly deeper inspection.
Leaks can be sneaky. That tiny puddle under your prep table might be a water line. That faint hiss near your stove? Could be gas. Don’t ignore the signs.
🧼 Do this: Walk the kitchen weekly and inspect under, behind, and around all major appliances. Look for puddles, unusual smells, or frost buildup on refrigeration lines.
⏰ When: Weekly walkthrough. Daily awareness.
Old fryer oil doesn’t just ruin flavor—it can damage your fryer, affect heat transfer, and even cause smoking or flare-ups.
🧼 Do this: Skim debris after each batch, filter oil daily, and do a full drain and wipe-down at least once a week. Check the thermostat calibration monthly for accuracy.
⏰ When: Filter daily, full clean weekly.
Dirty coils force your fridges and freezers to work overtime, driving up energy costs and burning out compressors. If you’ve noticed a fridge running warm, this is the first thing to check.
🧼 Do this: Vacuum or brush condenser coils on all refrigeration units (walk-ins, undercounter fridges, ice machines) weekly. Always power down before cleaning.
⏰ When: Weekly.
You can’t cook food to temp if your oven or fridge isn’t accurate. A 10-degree difference can make or break a steak—or violate food safety rules.
🧼 Do this: Check internal temps of ovens, grills, fridges, and freezers with a reliable external thermometer. Adjust as needed or schedule service if calibration is off.
⏰ When: Weekly.
