It’s also a good excuse to talk about how commercial hoods actually get bought — because more operators get burned on this one line item than almost any other.
A new Odis 12 East is coming to Erie
The new Odis 12 East is under construction, and we’re proud to be part of the build. HRI’s scope on the project includes the commercial hood system and the fire suppression — the two pieces of kitchen infrastructure that determine whether the cook line can operate safely, legally, and at the volume the concept demands.
Every new restaurant is exciting, but a project like this one is a good reminder of why the hood conversation gets its own attention early in the process. When it works, it disappears into the background. When it doesn’t, it becomes the single most expensive line item on the project — and often the reason a kitchen either can’t open, or can’t cook the menu it was designed for.
Odis 12 East will bring a new dining experience to Erie, and we’re excited to see it come to life. In the meantime, we thought this was a good moment to walk through what actually goes into buying and designing a hood system — because if you’re an operator planning your own build, this is one of the decisions that will define your kitchen for years.
A hood system is more than just the hood
When operators hear “hood system,” most of them picture the metal canopy hanging over the cook line. That’s the visible part. The full system includes several other components that all have to be specified, sized, and installed together:
- The hood itself. Sized to cover the cook line, with the right capture velocity for the equipment underneath it.
- Fire suppression. The chemical system that automatically discharges over the cook line in the event of a fire. Required by code, inspected annually, and non-negotiable.
- Makeup air unit (MAU). Replaces the air the hood exhausts. Without it, the kitchen goes into negative pressure, service doors don’t open, and the hood can’t exhaust effectively.
- Exhaust fans. Rooftop or wall-mounted, sized to move the required air volume out of the building.
- Grease duct. The welded ductwork that carries grease-laden vapor from the hood to the exhaust fan. Also code-regulated, with specific fire-rating and cleanout requirements.
- Supply duct. The ductwork bringing makeup air back into the kitchen from the MAU.
Every one of these components has to be sized in relation to the others. A properly specified hood over an undersized makeup air unit doesn’t work. A perfect makeup air unit paired with the wrong exhaust fan doesn’t work. The system has to be designed as a system — which is why the up-front conversation with your dealer matters so much on this line item.
What a commercial hood system costs in 2026
Here’s the number most operators want to know first. A fully installed commercial hood system in 2026 — including the hood, fire suppression, makeup air unit, exhaust fans, grease duct, and supply duct — runs roughly $5,000 per linear foot as a rule of thumb.
A few examples of how that scales:
- 10-foot hood: around $50,000 fully installed
- 15-foot hood: around $75,000 fully installed
- 20-foot hood: around $100,000 fully installed
Pricing varies meaningfully with a few factors. Duct run complexity is the biggest one — a hood with a straight vertical duct run to the roof costs less than one with a long horizontal run through occupied space. Solid-fuel hoods carry a premium over standard grease hoods. Tempered makeup air (which pre-heats or cools the incoming air) adds cost but is often required by climate or code. And building constraints — access, roof structure, existing MEP infrastructure — can drive real variability.
The $5K-per-linear-foot number is a useful starting point for budgeting, not a promise. The point of quoting it isn’t to lock you into a number. It’s to make sure that when you’re planning a kitchen build, you’re not shocked when the hood line item comes in at $75,000 instead of $15,000.
The most expensive hood mistake we see operators make
If we could give operators one piece of advice about hood systems, it would be this: size and spec the hood for the menu you might cook in five years, not just the menu you’re cooking on opening day.
Here’s what Cuyler has to say about it:
The specific scenario Cuyler describes is one we’ve seen play out many times. A concept launches as a burger joint, does well, and the owners want to evolve — maybe adding smoked brisket, wood-fired pizza, or a live-fire program. Any of those means solid fuel cooking. And solid fuel cooking requires a fundamentally different hood system than natural gas, propane, or electric cooking.
If your original hood was spec’d only for standard cooking, you can’t just add solid fuel underneath it. The hood isn’t rated for it. The grease duct isn’t rated for it. The fire suppression system isn’t designed for it. Local code enforcement will make you rip out the existing system and install a solid-fuel-rated one — which, depending on the complexity, can run anywhere from tens of thousands to well into six figures.
There’s a much cheaper move: spec the hood for solid fuel on day one, even if you’re not using it on day one. The upcharge to install a solid-fuel-rated system during a new build is a fraction of the cost of retrofitting one later. If there’s any real chance you’ll want to cook with wood, coal, or other solid fuel down the road, the answer is to plan for it now.
We’ve seen operators try to save money up front by under-specifying the hood — going with a smaller system, cheaper materials, or a hood rated for the wrong fuel type. The math sometimes looks good at first. Then the local code inspector shows up, finds the system isn’t compliant, and requires the entire installation be pulled out and redone with the correct hood, the correct grease duct, and often a tempered makeup air unit to meet code.
The “savings” up front becomes a six-figure correction. Every dollar saved on the initial install shows up multiplied on the redo. Hoods are one of the categories where cutting costs in the wrong place gets punished the hardest.
What to think about before you spec a hood
If you’re in the design phase of a commercial kitchen build, these are the questions worth working through with your dealer before signing:
- What’s the full menu you might cook over the next 5–10 years? Not just today. If solid fuel, high-BTU wok cooking, or any specialty equipment might be added later, the hood has to be spec’d for it now.
- What’s the peak BTU load of the full cook line? The hood has to move enough air to capture the vapor produced by every piece of equipment underneath it at peak. Undersizing here means smoke in the dining room and a code failure.
- What’s the duct routing look like in your building? A straightforward vertical duct run is cheap. A long horizontal run through occupied ceiling space, or a run that requires structural modifications, adds real cost. Understand the routing before you commit to a number.
- Is your makeup air unit properly sized and tempered? Under-sizing the MAU is one of the most common hood mistakes. In cold climates, tempering (pre-heating the incoming air) may be required by code and by common sense.
- Is the system UL-listed and code-compliant for your specific jurisdiction? Codes vary by location. What passes in one municipality may not pass in another. Confirm with your dealer that everything meets your specific local code.
- Who will service the fire suppression system annually? Fire suppression requires annual inspection and certification by a qualified service company. Establish that relationship before the system is even installed.
A brief note on fire suppression
Fire suppression tends to get less attention than the hood itself, but it’s genuinely one of the more important pieces of equipment in a commercial kitchen. It’s the automatic system that discharges chemical suppressant over the cook line if a fire breaks out — and it’s the last line of defense between a small grease fire and a catastrophic loss.
Two things worth knowing:
- The system has to be matched to the specific equipment underneath the hood. Different appliance combinations require different nozzle placement, different suppressant loads, and different tuning. Adding a new piece of equipment under the hood after the fact usually requires re-tuning the fire suppression system too.
- Annual inspection is required by code and by every insurer we know. Skipping the annual inspection isn’t just a code violation — it’s typically an insurance coverage problem too. Have the relationship with your service company established from opening day.

That’s the ideal way to approach both pieces of equipment on any new build. Split them across different contractors and you introduce points of failure that don’t need to exist.
