Avoid the Most Common Equipment Failures in Your Commercial Kitchen
Running a successful kitchen isn’t just about great food—it’s about keeping your equipment in peak condition so your operation doesn’t grind to a halt when you need it most. From walk-ins to fryers, here are the most common commercial kitchen equipment failures—and what you can do to prevent them.
Condenser Failure
When condensers aren’t cleaned regularly, dust and grease build up, causing overheating and system failure. A quick monthly brush-down can save you thousands.
Worn or Broken Gaskets
Door gaskets that are cracked or brittle allow cold air to escape, leading to ice buildup and temperature instability. Regularly inspect and replace gaskets to maintain efficiency.
Poor Calibration
Fryers, griddles, and ovens that aren’t properly calibrated can lead to undercooked or overcooked food, hurting both your consistency and reputation. Schedule routine checks to keep temps accurate.
Dirty Filters and Ducts
Neglected hoods can’t ventilate properly, increasing fire risk and making your kitchen an uncomfortable (and potentially dangerous) place to work. Clean filters weekly and schedule duct cleaning quarterly.
Don’t wait until your walk-in fails to give it attention. Regular inspections of door seals, defrost cycles, and refrigerant levels help you avoid costly downtime and food spoilage.
Ice makers, combi ovens, and coffee machines all rely on water. Without proper filtration, scale buildup can damage components and impact performance. Change filters as recommended and inspect for mineral deposits.
A clean dishwasher is a functional dishwasher. Daily rinsing of filters and periodic descaling will keep it operating at full capacity and ensure your warewashing meets health code standards.
Disposers are tough, but not indestructible. One piece of silverware can take down a whole system. Use a silverware catch or magnetic trap to prevent damage.
Whether it’s internal checklists or a third-party service contract, having a preventative maintenance program in place is the best way to extend the life of your equipment, reduce downtime, and save on major repairs.
The Bottom Line:
Your equipment is the backbone of your kitchen. Clean it. Check it. Service it. And you’ll keep things running smoothly, even during your busiest rushes.
